Samosas

Whole-wheat pastry flour, potatoes, peas, cardamom, black pepper and corriander, fried in vegetable oil or ghee. 

Lotus-Root Koftas

Fresh lotus root, chick-pea flour, green chiles, garam masala, turmeric, corriander, garlic, tomatoes

Mixed-Vegetable Pakoras

Chick-pea flour, mixed vegetables, corriander, cumin seed, ginger, black pepper, fenugreek (methi), asofoetida,  fried in vegetable oil or ghee. 

Potato Kachoris

Whole-wheat flour, salt, oregano, asofoetida, potatoes, ground cumin, fennel, anise seed, corriander, ginger, garam masala, fried in vegetable oil or ghee. 

California Salad

Mixed greens, tomato, olive, artichoke, mushroom, cucumber, carrot, beet, tulsi. 

California Avocado Salad

Mixed greens, avocado, sunflower sprouts, cucumber, tomato. 

Cucumber Salad

Cucumber, dill, cumin, black pepper, garlic, sour cream. 

Bitter Mellon Salad (Kerala)

Baked and sautéed with roasted sesame, Himalayan salt, tulsi.

Olive oil, dill, lemon, black pepper and honey.
